On the lookout for a way to use up some soft oranges I was trawling through sugar free recipes for orange and almond cakes and stumbled across I Quit Sugar’s Carrot cupcakes .
I abandoned my orange cake search purely as the carrot cakes had the word ‘frosting’ in the title.
I used organic flour rather than the gluten free one in the recipe… Mainly as I only had the one option in the pantry … Other than coconut flour which reacts rather differently to the average flour options.
Anywhooo … The mix was very wet but baked rather well, they are solid but not hard … Next time I would mix it less and try a different flour.
They are not very sweet at all, I used less than the recommended amount of the Rice Malt Syrup but there is enough there to make these a little treat after dinner.
One to have in the repertoire …
