Getting our Biltong on

Driven by curiosity and a cost saving drive I am attempting to create my own Biltong at home.

After much online research, reading guides and recipes I decided to give it a try.

After a very friendly offer to borrow a Biltong Box from a local, and a visit to the butcher we were ready.

I used this recipe … and here are the steps.

1. Toasting the coriander and grinding it up with salt and pepper

2. Slicing up the meat into portions for drying

3. The marinade, mixing Worcestershire sauce, Malt vinegar and salt the meat was submerged for a few hours

4. We then patted each piece dry, weighed them (so we can measure moisture loss over the days to come) and they were hung up!
